«Search and creation of new breeding material for sunflower hybrids development»
The aim of our work was to develop new initial material for sunflower line breeding. For this purpose we evaluated sunflower hybrids for main characters to select the most prospective among them and use them for new lines development by artificial self-pollination. Russian and foreign commercial sunflower hybrids were used as a material. Hybrids were sown by randomized blocks with 3 replications. Every plot had 4 rows. Following hybrids were selected: NK Brio as a one of the highest productive hybrids in our region, Aurora as a very early hybrid with high yield, Limagrain sunflower hybrids Tunca and LG 5550 as a resistant to new aggressive broomrape races, LG 5663 with resistance to Euro-Lightning herbicide, LG 5665 and LG 5550 with resistance to new races of downy mildew. Selected hybrids were self-pollinated for the following pedigree breeding. So the new prospective initial material was developed on the base of commercial sunflower hybrids.

«Oats – multifunctional use crop»
Additives introduction in amounts of 10, 20, 30% by weight of wheat flour lead to gluten strengthening due to the high content of unsaturated fatty acids in the oat flour, which, under the action of lipoxygenase enzyme in the presence of oxygen in air are converted to peroxy compounds, oxidizing -SH-groups of wheat protein to -S = S- groups reinforcing gluten proteins frame. The results of these starting material studies suggest the theoretical basis for the possibility of applying the studied oat products for further study of oat-wheat mixtures in baking as biologically valuable products to increase the nutritional value of bakery products.

«Changes in the composition and balance of humus in agricultural use of leached chernozem in the azov-kuban lowland»
The aim of the research is the monitoring of the composition and balance of leached сhernozem humus in the second rotation eleven-field crop rotation in the agricultural crops cultivation of various technologies to develop proposals for the reproduction of its fertility. Studies were conducted in the long-term multi-factor field experiment in a typical lowland agricultural landscape of the southern part of the Azov-Kuban lowland. Improvement of the qualitative composition of leached сhernozem humus happens when non-pesticide and environment friendly field crops cultivation technologies are used in no-till farming system primary tillage. Agricultural crops cultivation technologies intensification does not add to humus quality improvement as the content of humic acids associated with calcium is significantly reduced. In the second crop rotation the positive balance of humus in the upper layer of leached chernozem is noticed under three-years-vegetation Lucerne and corn, regardless of the technology of their cultivation. Under continuous winter crops sowing a self-supporting balance of humus in the soil is observed depending on the precursor when using intensive technologies. A negative balance of humus in leached chernozem is established in different technologies cultivation of tilled crops.

«Ecological and genetic researches of wild-growing types of alpine currant and biberstein's currants of lagonaki uplands»
Many wild-growing types of currant differ in fruits of a high taste and can be entered into culture. Some types are used as ornamental plants. On Lagonaky uplands two wild-growing types of currant are widespread in the basic: currant Alpine (Ribes alpinum L.) and Biberstein's currant (Ribes biebersteinii Berl.) which are of interest to selectors due to their complex resistance to diseases and possibility of their use in the decorative purposes. Currant Alpine – a bush up to 1,5 meters high with the dense compactly located branches. Flowers of chartreuse color. Inflorescences consist of 15-30 male flowers or 1-5 female, forming hanging brushes. Fruits are mealy on taste, pink berries are of 6-8 mm in size. Blossoming comes in May and goes till June. Fructification is in July and August. Biberstein's currant is a bush up to 2 meters high with naked light shoots. Brushes are from 4 to 6 cm long, friable bearing 15-50 flowers each. Fruits are small 5-7 mm in the diameter. Blossoms in June, fructifies since the end of August. Plants of wild-growing types of Alpine currant and Biberstein's currants growing in Lagonaky uplands in various ecological conditions were a material for research. Each bush of currant is described according to 8 morphological features of a leaf: length of the main vein, length a leafstalk, length of the left vein of the second order, length of the right vein of the second order, length of the left vein of the first order, length of the right vein of the first order, a corner between the left vein of the second order and the main vein, a corner between the right vein of the second order and the main vein and according to 6 signs of efficiency: number of shoots, quantity of brushes on a shoot, quantity of berries on a brush, the mass of one brush, mass of one berry, mass of berries on a bush. Statistical processing was carried out by methods of dispersion and cluster analyses by means of Statsoft Statistica 10.0 software package. The dispersion analysis of eight morphometric signs of Alpine currant and Biberstein's currant leaf showed that except for one sign "a corner between the left vein of the second order and the main vein" distinctions between types according to analyzed signs take place. Their contribution to the general dispersion is much greater, than variability within each species. The contribution of the corresponding dispersion to the general one fluctuated from 4,6% (a corner between the right vein of the second order and the main vein) to 79,9% (length of the

right vein of the second order). It should be noted that the lack of distinctions between types of Alpine currant and Biberstein's currant according to the sign "a corner between the left vein of the second order and the main vein" is explained by small variability of this characteristics. It is established that leaves of Biberste currant plants are characterized by larger sizes. So the average length of the main vein at Biberstein's currant makes 5,2 cm, and in Alpine currant – 2,2 cm, the length of the right and left veins of Biberstein currant f is twice more than that in Alpine currant. Corners between the left and main vein are almost identical, varying within 47-49 degrees. The cluster analysis divides cenopopulation of Biberstein currant and Alpine currant into two groups.

WHEAT FLOUR MIXES WITH THE PRODUCTS OF OATS IMPACT ON BREAD BAKING PROPERTIES

In human life the bread is of paramount importance. The amount of its consumption depends on the lifestyle and living standards of people, so it is very important to provide people with the necessary quantity of bread with complete proteins, fats, vitamins and mineral substances in accordance with medical and biological requirements. World practice shows that the most acceptable physiologically reasonable way to fill in insufficient intake of vitamins from food is technological modification of food (enrichment of raw materials used in the production of food). Therefore, the purpose of this study was to examine the baking properties of mixtures of wheat flour and by-products of oats and development of formulations and technologies of bread and bakery products for therapeutic and prophylactic purposes on their basis. The results of the "flour power" research for quality and quantity of gluten in the experimental samples of mixtures of wheat and oat flour showed that with the increase of the dosage of oat flour from 10 to 30% amount of gluten decreased compared with control sample. Elastic properties of wet gluten with the oat flour dosage increase in mixtures were changed to strengthening. Mathematical processing of experimental data confirmed the dependence of the wet gluten mass fraction rate from oats processing products dosage. Mathematical processing has confirmed the existing relationship between PE (falling number) and the dosage of products of oats processing; the correlation was significant and reliable. The increase of nutritive value of mixtures with the increase of oat flour dosage was revealed. The highest variant was observed in 30 % oat flour dosage. The result of preliminary studies on the baking properties of the mixtures was the technology of bread with oatmeal. It involves the use of oat flour only for making sour dough; this solution helps to protect b-glucan in oat flour from possible destruction under the action of b-glucanase of wheat flour during fermentation. For use of rolled oats in baking its preliminary preparation before its introduction into dough is provided. First prefabrication is produced from it with humidity 64-65% and titrated acidity 2,0 +0,2 deg. N, then it is homogenized and brought into the dough. The results of the developed products nutritional value determination confirmed the effectiveness of using oats processing products in bakery. The content of dietary fiber, phosphorus, iron, thiamine and Niacin in 150 g of the developed products is high and is more than 15% of the daily rate of consumption, which gives the right to classify them as the functional products.
